Just seeing this post now but I think it’s great! I would co-sign your thoughts and also add that I also think it is a backlash against all the elaborate rolled fondant decoration we have been seeing for years. Visually those have a sterile lack of texture and also, are not nice to eat. So what could be better than fluffy, pretty buttercream?

Back in the 50s someone gave my mother a cake decorating kit. Her thing was roses. She piped what seemed like hundreds of them and we ate them until we were sick with sugar as only kids can. For years were cakes were decorated with Crisco roses an inch thick. I thank God that her next fad was carrot cake with cream cheese frosting.
